Tahiri Recipe-Punjabi Rice Recipe
Ingredients:
250gm Basmati rice
2 large onions
10 flakes garlic
8 green cardamoms
6 cloves
2 bay leaves
3 small cinnamon
12 pepercorns(optional)
1 t sp cumin seeds
1 t sp chilli powder
1 1/2 t sp garam masala
salt to taste
2 cups(tender) shelled peas
4 tb sp ghee
Preparation:
Wash and souk the rice for 15- 20 minutes.
grind the garlic & onions to a paste.
Method:
Heat ghee, splutter the cardamoms, cloves, cinnamon and curnin seeds. Add garlic-ginger paste & fry on a slow fire till goldan. Add the rest of the ingredients and stir-fry peas start popping. Add the drained rice & carefully fry again till the rice is coated with masala. Add sufficient water to come upto 3 cm above the surface of the rice. Cover & allow to boil quickly on a high flame & cook till holes appear on the surface. Reduce the heat & allow to cook till
rice is tender & each grain separate & the water absorbed.
