Ingredients

-1 litre cow’s milk

-1bottle”chaina pani”

-6 cups sugar

-6 cups water

-1 tb sp milk

-1 tb sp sugar for caramel

-1 level t sp flour.

Preparation:

- Boil the milk, take it off the fire and slowly pour in a thin stream, the chaina pani on one side of  the milk.

- With a spoon , lightly away the   chaina pani towards the centre  till you see the  bluish water separate.

do not stir.

-keep for about 15 minutes uncoverd, till chaina separates.

- Put in a muslin bag and  tightly  tie it and lit drip for 5-6 hours. mix the sugar and water, stir till the sugar melts, and keep on the fire to boil. add 1 tb sp milk and allow to boil without stirring till foam comes on top remove this.

-Make a caramel with 1 tb sp sugar  and add to the sugar syrup .

-Remove chaina from muslin bag and mash with the ball of your hand, taking care that no fat oozes out the chaina add  flour and mash  again till well mixed and still no fat oozes out.

-Divide into sixteen portions and.

oil into oval, thick flat shapes.

Method:

Boil the syrup on a high continuous flame till, when checked between the frst finger and thumb is should feel only mildly sticky.

Now add the prepared  chaina shapes and allow to boil without  lowering  the and cook for 15 minutes.

Adding boiling hot water when you feel the syrup is thickening (about 2 -2 1/2 cups water goes in about 4-5 times during the cooking period.) when the chum chum start sinking, take off fire and allow to cool without the lid on.
