Murg-E-Musallam Recipe
Ingredients:
1 CHICKEN SKINNED AND CLEANED
1 MEDIUM SIZED ONION
6 CLOVES GARLIC
3 CM PIECE GINGER
6 GREEN CARDAMOMS
6 CLOVES
1 TB SP CORIANDER
2 T SP POPPY SEEDS
1 TB SP GRATED COCONUT
A PINCH OF NUTMEG
2 FLAKES MACE
1 CUP CURD
1/2 T SP SAFFRON
1 TB SP HOT MILK
1 LARGE ONION
3 TB SP GHEE
SALT TO TASTE
PREPARATION:
Wash the whole chicken thoroughly from inside also with water and a few drops of vinegar.
Allow to drip and then pat it dry.
Grind the next ten ingredients to a fine paste and mix withbeaten curd.
Add sait to taste for the filling only.
slice the large onion and fry till bron.
cool and grind it coarsly,and mix with the ground ingredients.
stuff the chickin from the vent end with half the above masala and truss it so that, while cooking, no masala spills out .soak the saffron in milk.
Method
Heat gheein heavy flat bottomed pan and fry the rest of the masala in it.
place the stuffed chicken in it reduce heat and put the lid on.
Allow to simmer till the natural juice from the chicken come out.
change the sides of the chicken so that both sides cook properly and the masala is well fried.
Add salt to taste and a cupful of water.(add 1 t sp chilli powder if desired) and cook till chicken is fully tender and the liquds reduced to half.
just before taking off the fire add saffron and cover the pan.
