Khasta Koftaein

1 Kg mince meat

1 tsp chilli powder

1 tsp ginger powder

2 tsp garam masala

3 tbsp chopped coriander leaves

salt to taste

3 tbsp thick curds

1 tbsp oil

6 tbsp ghee

1 1/2 cups curds

6 cloves

1 tbsp kewra water

A pinch of saffron

1 btsp warm water

1/2 cup kha (solidified milk)

1/2 cup milk cream

a little salt for the gravy only

Prepartion:

Combinehe first 8 ingredients & pass through a mincer twice. Cover & keep for 1 1/2 hours.

grate the khoa.

METHOD:

Heat ghee in a heavy based deep pan & splutter the cloves.

Add asfoetida water, curds and 1/2 cu[p water and allowto simmer.

In the meantime make sausage shape 10 cm long rolls with mincemeat & slowly slide into the pan. Cook on slow fire shaking the pan only so that the koftas do not stick to the base & if hy do,

add 2-3 tbsp water cover the pan and shake it to separate the koftas.

repeat process till koftas arĀ  brown.

Add half a cup of waterr, cover and coke till koftas re soft.

Finally add the grated khoya and mi lk cream. Simmer for about five minutes or till gravy is thick. Remove from heat and sprinkle and kewra watert. cover the pan for the aroma to permeate.

TO SERVE:

Serve with boiled rice.
