Ingredients:

YOU WILL NEED:

2 CHICKEN THIGHS

1 CARROT

1 ONION

1 STICK CELERY

1 T SP BLACK PEPPERCORNS

SALT, PEPPER

1 1/2 LITTERS {6 CUPS} WATERR

2 EGGS

60G {2 OZ} GRATED CHEESE

TB SP CHOPPED PARSLEY

METHOD:

1. Peel and roughly chop carrot, peel and quater onion, chop celery. Place chicken thighs, vegetablies, water, salt and  peppercorns in a large saucepan. bring to boil, raduce heat, simmer covered 1 hour.

Strain  stock through sieve into another  saucepan. Discard chicken and vegetables; only the clear chicken stock is required in this soup.{ chicken and   vegetables can of courser, be used for another   meal } skim a clean, dry piece of paper towal over surface of hot stouck to remove grease. repeat preocess towel  each time.

beat eggs, finely grated  cheese and parsley together. return stock to heat brng to boil.While stirring vigorously with one hand, add egg mixture gradually in  a thin stream with the other. continue stirring over heat for 1 to 2 minutes after all egg mixture has beenadded,then removefrom heat immediately. season with salt and pepper.

Serves 4 to 6.
